Curried Chicken Salad (Quick Version)

Ingredients:
1 whole rotisserie chicken from the store, already cooked
1/4 c. mayo
1 t. curry powder
1 t. honey
1 t. lemon juice
3 scallions, thinly sliced
2 celery stalks, thinly sliced
3/4 c. halved seedless red grapes


De-bone and take the skin off of the chicken, and shred it into smallish pieces. In a separate bowl, mix mayo, curry, honey, lemon juice, scallions, celery, and grapes until combined. Toss in the shredded chicken and combine. Add salt and pepper (and cilantro, if desired) to taste.

This is great for sandwiches, by itself or served in butter lettuce cups. Yields 4-6 servings and is de-lish!
