My husband thinks these are delicious!Ingredients:
2 garlic cloves, minced
1 lb. ground chicken breast (or 3 boneless, skinless breasts)
3/4 c. pizza sauce
1/4 t. crushed red pepper
1/4 c. basil
1 (13.8 oz.) can of refrigerated pizza dough
1/2 c. mozzarella
Preheat oven to 425 degrees. In a frying pan, cook chicken and garlic until the meat is no longer pink. (If you use chicken breasts instead of ground chicken, you may want to cut the chicken into very small pieces as it cooks.) Once chicken is finished, stir in pizza sauce and red pepper. Reduce heat and simmer for about 5 mins. Remove from heat, stir in basil. Let stand 10 mins. Meanwhile, unroll the pizza dough onto a baking sheet, coated with cooking spray. Cut dough into quarters and pat each portion into roughly a 8 x 6-inch rectangle. Divide chicken mixture evenly among the dough rectangles, topping each with about 2 T. of mozzarella. Working with one rectangle at a time, fold in half over the chicken and cheese mixture, pinching the sides to seal the calzone. Once all are sealed, cook for about 12 mins. or until golden.
