Classic Meatloaf

As a kid growing up, I never liked meatloaf. But, I'll tell you, this recipe is tasty. It's also relatively healthy. The recipe below is halved, but it makes enough for two. If you double it, you can get two pans of meatloaf out of it.

Ingredients:
12 oz. (1 package) ground turkey or beef
3/4 c. chopped onions
1/2 c. breadcrumbs
1/3 c. ketchup
1/3 c. parsley
1 egg & 1 egg white, beaten (if you double the recipe, use 3 eggs)
1/2 t. each of thyme, salt and pepper

Mix everything together in a bowl, using your hands. Don't overmix, but combine until everything is blended. Grease loaf pan and fill the pan with the meat mixture, mounding the top. Put in the oven at 350 degrees for an hour and 15 mins.
