Grilled Chicken & Pesto Farfalle

We tried this recipe tonight, and it was quite delicious. The recipe serves 10, so if you have a dinner party, this could be an option.


Ingredients:
4 boneless, skinless chicken breasts
salt and pepper
1 lb. box of farfalle (bow tie pasta)
1 T. butter
3 garlic cloves
1 1/2 c. milk
2 T. flour
1/3 c. of commercial pesto (I like Classico)
3/4 c. half-and-half
2 c. shredded Parmesan
4 c. halved grape tomatoes (2 pints)
1/2 c. basil

Put salt and pepper on your chicken and grill it. Once it's done and has cooled for 5 min., cut into bite-sized pieces. Set aside. Cook pasta as well according to directions. While the pasta is cooking, make the sauce. First, heat butter and garlic in a medium-sized saucepan over medium heat. Combine 1/2 c. milk and flour together in a separate bowl, and whisk them together. Pour milk mixture into saucepan, continuing to whisk continually. Stir in pesto, and gradually begin adding the rest of the milk and the half-and-half. Continue to whisk the mixture in the pan. Cook about 8 minutes or until the sauce thickens, add 1 c. cheese and stir until it melts.

Once the sauce is done, toss the pasta, chicken and sauce together to coat everything. Add tomatoes and basil. Sprinkle remaining cup of cheese on top, and serve immediately. The recipe seems high in calories, but really, it's only about 500 cals. for 2 cups, so for cheesy-pasta, it's not that bad!
