Leftover Turkey -- Make Soup or Sandwich

With Thanksgiving right around the corner, I thought I'd publish a few recipes for a delicious lunch or dinner with the leftover turkey.

Soup
8 c. turkey stock (made from turkey carcass or store-bought)
3 small carrots, chopped
2 c. egg noodles
1 1/2 c. turkey
salt, pepper, dill, lemon wedges to taste

Bring stock to boil and season with salt and pepper. Add carrots and noodles, return to boil. Reduce heat and simmer until carrots are tender and noodles are al dente, about 4 mins. Stir in turkey, and simmer 1 min. Sprinkle with dill, and serve with lemon wedges.

Sandwich
2 t. grainy mustard
2 slices toasted bread
2 t. mayo
2-4 pieces of turkey
1 piece extra sharp cheddar
4 thin slices of green apple
2 pieces red-leaf lettuce

Spread mayo and mustard on bread, layer other ingredients in-between slices of bread. Enjoy.
