Lemon Rosemary Chicken on Skewers

This is a pretty good recipe. It calls for marinating the chicken for 1-2 hrs., but we marinated it overnight. It wasn't too lemony, and the flavors really melded. You can serve on skewers or without, if you're trying to bypass the complication.We had the chicken for dinner with sides, but it would be ideal as an appetizer or for a party.
Ingredients:3-4 chicken breasts, boneless & skinless
3 T. olive oil
2 T. lemon juice
2 t. grated lemon zest
1 t. rosemary
1 t. minced garlic
1/2 t. salt
1/4 t. pepper
Cut the chicken into strips and mix together all of the other ingredients into a marinade. Add the chicken to the oil-lemon mixture and marinate for at least 2 hrs. If you want to serve on skewers, thread the chicken onto them. You can either grill the chicken over a medium-high grill or broil in the oven, turning every 5 mins. If you use skewers, make sure to cover the exposed wood with foil or soak in water for 30 mins. before you use them.
