Chicken Breasts Stuffed with Garlic & Herbed Goat Cheese

This recipe is a good amount of healthy and rich. It doesn't take too long to cook once you roast the garlic. I prepared the filling the day before I cooked the chicken, and then, it was an easy 25 mins. to make.

Ingredients:
1 whole garlic head
1/3 c. herbed goat cheese
3 boneless, skinless chicken breasts
1/2 t. salt
1/2 t. pepper
2 t. olive oil


Preheat oven to 350 degrees. Remove white papery skin from garlic head (do not peel or separate cloves), and wrap head in foil. Bake at 350 for 1 hr. and once finished, unwrap and cool for 10 mins. Separate cloves and squeeze to extract garlic pulp, discarding the skins. Combine garlic and goat cheese, stirring well and set aside. Then, cut a horizontal slit through the thickest part of the chicken, creating a pocket. Stuff mixture into the pocket, and put salt and pepper on both sides of the chicken. In an ovenproof skillet, heat olive oil over medium-high heat and add chicken to the pan. Cook for 3 mins. on each side until lightly browned, then bake chicken at 350 degrees for about 20 mins. or until chicken is done.
