Easy Lasagna Any Way You Like

When I started this blog, I decided that I wouldn't include recipes that were probably in most people's dinner repertoires, like how to grill chicken or make burgers. But I feel like my recipe for easy lasagna may be helpful for some working girls out there. I don't boil my noodles, like some people do, and I usually assemble it the night before and stick it in the oven when I get home from work. (Actually, my husband usually sticks it in the oven, but it still "counts" as a dinner I made.) The recipe below is for an 8 x 8 baking dish, but you can easily use a little more of everything for a larger lasagna.

Ingredients:
lasagna noodles (no-bake noodles are better, but the regular ones work fine)
small container of ricotta cheese
spaghetti sauce (anything you desire)
1 egg
shredded white cheese (Italian, mozzarella, etc.)
any filling you'd like: ground beef or turkey, spinach, broccoli, etc.
basil


My favorite lasagna is vegetable lasagna, but my husband really likes the meat variety. Whichever one you'd like to make, it's basically the same. If you use ground beef, you'll need to brown it ahead of time. If you use a hard vegetable (like broccoli or cauliflower), you can either wash and use or steam to make it softer. Something like spinach is good to wash and use, just make sure you pat it dry. Then the fun begins...

Put some sauce on the bottom of the pan, then the noodles on top. Mix ricotta cheese with an egg, and layer that next. Then, add meat or vegetables, then the sauce again, noodles, sauce. If you want to make a really thick lasagna, continue to add meat or veges, sauce, noodles, sauce. The last layer should always be sauce, noodles, sauce. Sprinkle your shredded cheese on the very top and basil as well, if desired. Cover and bake for 30 mins. at 350 degrees. Uncover and bake for another 20-30 mins. and enjoy!
