Peanut Butter Cup Cookies

My Mom has been making these cookies for as long as I can remember, and we have them every year during the holidays. My husband really likes them, and when he comes home with me, he polishes off a lot of them.

Recently, my Mom bought me some of the hardware that's needed for these cookies, basically, a mini-muffin pan and mini-muffin paper cups.



I was surprised how easy these cookies were to make, and they taste just like my Mom's!

Ingredients:
1/2 c. butter
1/2 c. brown sugar
1/2 c. white sugar
1/2 c. peanut butter
1 egg
1 1/4 c. flour
3/4 t. baking soda
1/2 t. baking powder
1 small bag of Reese's peanut butter cups
36 mini-muffin paper cups

Preheat oven to 350 degrees. Mix first 5 ingredients together with an electric mixer. Once combined, add flour, baking soda and baking powder. Roll dough into small balls, and place them into mini-muffin paper cups in a mini-muffin pan.

Bake for 8 - 10 mins. until dough rises slightly and is golden brown. Take pan out of the oven, and push 1 unwrapped peanut butter cup into the center of each cookie. Place pan in fridge for about 30 mins. or until peanut butter cups harden.

Enjoy! Recipe makes about 3 dozen cookies.

Hey girl! These cookies look amazing... I want to try and make them, but what kind of flour specifically do I use? APB

Thanks for leaving a comment - I appreciate it! I use just regular all purpose flour. I think with fancy cake recipes, you sometimes use different flour, but I always bake with all-purpose.
