Chicken Salad Stuffed Shells

This was another shower favorite. I love chicken salad, but I wasn't sure what these would taste like. Delicious!Ingredients:
1 box stuffed shells
store-bought chicken salad
OR
rotisserie chicken salad
1 whole rotisserie chicken from the store, already cooked
1/4 c. mayo
1 t. honey
1 t. lemon juice
1/4 c. onion, chopped
2 celery stalks, thinly sliced
1/4 c. sliced grapes (optional)
salt and pepper to taste
Cajun seasoning or red pepper flakes to taste
To make chicken salad, de-bone and take the skin off of the chicken, and shred it into smallish pieces. In a separate bowl, mix mayo, honey, lemon juice, onions, celery, and grapes until combined. Toss in the shredded chicken and combine. Add salt, pepper and Cajun seasoning to taste.
Cook shells according to directions. Once cooked, allow to cool. Stuff chicken salad into shells, and serve.
You can also try curried chicken salad in the shells if you prefer.
