I know it may seem simple, but I always have trouble hard-boiling eggs. I love how they taste - in salads, chicken salad, with salt - but I rarely make them. Hopefully, if other working women have trouble with hard-boiled eggs, this will help.

Ingredients:
eggs
water
salt
Place eggs in a large saucepan, and cover them with cold water about an inch over the top of the eggs. Add about 1 t. of salt to the water for easier peeling later. Bring to a rolling boil over high heat. Now, you have two options. You can either remove the pan from the heat and cover it or reduce the heat to low. Either way, allow the eggs to sit in the hot water for 10 - 15 mins. After 15 mins., run cold water over the eggs until cool and then, peel and eat. For soft-boiled eggs, cook the eggs a few mins. less, about 5 mins.
