Chickpea and Red Pepper Salad

This is a really tasty salad. The recipe below makes about 3 cups and is good for a day or so in the fridge. You can serve alone or with bagel-chip dippers.
Ingredients:
1 15 oz. can chickpeas, rinsed and roughly chopped
4 scallions, sliced
1 c. arugula, chopped
2 jarred (about 1/4 c.) roasted red peppers, chopped
2 T. lemon juice
2 T. olive oil
salt and pepper to taste

Throw it all together and serve. It's a very delicious recipe.
