This salad is tasty and colorful and takes full advantage of fresh summer vegetables. I just made gazpacho (the soup) the other day, and a lot of the ingredients are the same. I took this salad to a 4th of July party this weekend, and I think people enjoyed it. I served it with bagel chip dippers.

Ingredients:
4 plum tomatoes, diced
2 small yellow bell peppers, diced
2 small seedless cucumbers, diced
1 red onion, diced
2 T. red wine vinegar
2 T. extra-virgin olive oil
salt and pepper to taste
In a medium bowl, combine ingredients together. This recipe makes about 6 c. of salad.
