Guinness Chocolate Cake

Author: Amateur Cook // Category: ,
A few weekends back, we went to a friend's house to celebrate two engagements in the group. We all brought something to share, and one of my friends baked a Guinness Cake, using real Guinness beer. It was a nice cake, very moist...and look at the way she decorated it!

Ingredients:
1 c. Guinness stout
10 T. unsalted butter (1 stick plus 2 T.)
3/4 c. unsweetened cocoa
2 c. sugar
3/4 c. sour cream
2 large eggs
1 T. vanilla
2 c. flour
2 1/2 t. baking soda

frosting
1 1/4 c. powdered sugar
8 oz. cream cheese (at room temp.)
a little heavy cream (eyeball it)

Preheat oven to 375 degrees, and butter a 9 x 13 pan. Heat Guinness stout and butter, and stir until melted. Once melted, beat cocoa and sugar together and add to melted beer-butter. Mix sour cream, eggs and vanilla. Add them, plus flour and baking soda, to mixture. Pour into the buttered pan and bake for 40 mins. Allow to cool, then frost. To make frosting, beat sugar and cream cheese together until spreadable. Add a little heavy cream until you get to the consistency that you think works for the frosting.
