Apple-Stuffed Pork Loin

My husband made me a special dinner this weekend, and it was excellent! The great thing about it is that since the meal turned out so well, he's been talking about trying other new, special dishes. I promised that I'd post every single recipe if that meant he was cooking....

Ingredients:
1 1/2 lbs. boneless pork loin
1 t. salt
1 t. ground ginger
1 t. ground cloves

Stuffing:
2 green onions, chopped finely
2 green apples, grated or chopped
2 T. soft butter
2 T. brown sugar
1 T. mustard

Preheat oven to 350 degrees. Mix all ingredients for stuffing and set aside. Make slits in loin, deep enough for filling. Rub pork loin with salt, ginger and cloves. Place loin in roasting pan and spoon stuffing into slits. Place rest of stuffing around loin. Bake for 1 1/4 hr. - 1 1/2 hr. or until pork is done. Let stand 15 minutes covered with foil before slicing.

After slicing, garnish with sauteed apples, spoon pan juices over slices with extra stuffing.
